Brilliant Baked Beans

Depending on how many people you are feeding, add cans of beans to suit. One can per person/serve.

Ingredients

  • 1 onion, chopped
  • 1 clove garlic, crushed
  • One of the following:
    • 2 sliced chorizo sausages;
    • 6 rashers of bacon, chopped;
    • or 200g pancetta, chopped
  • 1 can baked beans
  • 1 can borlotti beans, rinsed and drained
  • 1 can kidney beans beans, rinsed and drained
  • 1 can cannellini beans, rinsed and drained
  • 1 can tomatoes
  • 1 tbsp brown sugar
  • 1 tsp mustard powder
  • ½ tsp dried oregano
  • ½ cup tomato chutney
  • ½ cup tomato sauce
  • 2 tbsp white vinegar

Herbs for garnish

Bread for toasting

Instructions

  1. Preheat oven to 170
  2. Heat oil in oven proof pan. Add onion and garlic and cook, stirring until onion is tender.
  3. Add pancetta and cook a few minutes longer.
  4. Add the rest of the ingredients, stirring to combine. Once it is simmering, cover and pop in the oven for 30 minutes, stirring once or twice.
  5. Serve on toast with chopped parsley.

Cooking time: 30 minutes
