Portuguese Chicken Burger

Smoky, spicy and delicious. Feel free to swap out the piri piri sauce recipe for store-bought sauce (we did).

Ingredients

Marinade

  • 3 thyme springs, leaves roughly chopped
  • 2 tsp smoked paprika
  • 2 garlic cloves, crushed
  • Finely grated zest and juice of 1 lemon
  • 1 tbs olive oil
  • 1 tsp chili flakes

Burger

  • 3 x 180g chicken breast fillets, tenderized and cut horizontally into bun-sized portions
  • 4 slices cheddar cheese
  • 4 soft wholemeal rolls, split, toasted
  • 4 oak lettuce leaves

Yoghurt sauce

  • 1/2 cup (140g) thick Greek-style yoghurt
  • 1 garlic clove
  • Juice of 1/2 lime
  • 1 tsp chili flakes

Piri Piri sauce

  • 1/4 cup (60ml) rice malt syrup
  • 4 long red chilies, finely chopped
  • 1 tsp sweet paprika
  • 1 tsp finely grated ginger
  • 1 garlic clove, crushed

Instructions

Marinade

  1. Combine all ingredients in a bowl. Add chicken and turn to coat.
  2. Chill for 3 hours or overnight to marinate.

Yoghurt sauce

  1. Combine all ingredients in a bowl.

Piri Piri sauce

  1. Combine all ingredients with 1/4 cup (60ml) water in a small saucepan over medium-low heat.
  2. Cook for 5 minutes or until thickened. Remove from heat and set aside to cool.

Burger

  1. Barbecue chicken fillets for ~4 minutes a side on medium-high heat, or until cooked through. 
  2. Lightly toast buns with cheese to melt.
  3. Spread yoghurt sauce over roll lid.
  4. Top with lettuce and chicken. Drizzle with piri piri sauce.
