Spiced Beef Curry

This slow-cooked curry is elevated by a variety of condiments including sultanas, chopped nuts, shredded, browned coconut, dried shallots, chopped apple and fresh banana, chopped.

Ingredients

  • 4 tbsp oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 kg round steak, cubed
  • 3 tbsp curry powder
  • 2 cups beef broth
  • 2 whole dried red chillies
  • 1 tbsp brown sugar
  • 1 tsp cinnamon
  • 3–4 medium potatoes, cubed
  • 200 ml sour cream

Serve With

  • peanuts, chopped
  • apple, sliced
  • shredded coconut, toasted
  • sultanas
  • banana, sliced
  • rice
  • a green vegetable

Instructions

  1. Sauté the onion and garlic in the oil until onion is soft.
  2. Add the beef and stir fry until brown.
  3. Add the curry powder and heat, stirring, for 2 minutes.
  4. Stir in the broth, chilies, sugar, and cinnamon.
  5. Bring to a gentle boil, then turn down heat to low and cover. Simmer for 1 hour, stirring occasionally.
  6. Add potatoes and simmer, covered, for another hour until tender.
  7. Remove the chilies.
  8. Slowly stir in the sour cream and heat gently (without boiling) for a minute or two.
  9. Serve over rice, with green vegetable.
