Goan Pork Not-Quite-a-Vindaloo

While the original was probably, definitely a vindaloo, this one probably, definitely isn't. We subbed the dried birds-eye chillies for standard long red ones, purely for convenience, and it was probably a mildish-mediumish heat. Don't skip the yoghurt and mint chutney, either. Super tasty! Freeze the other half of the curry paste for later. You're definitely going to want this again.

The original recipe asks for thigh fillets with the skin on, but I'm not sure they (or I!) need it. Haloumi could also go in, instead (or in addition to) the feta. Basically, whatever you like to eat hot out of an oven. Weekday hero!

Turmeric Chicken Soup

A good spicy-sour broth, served with plenty of vegetables.

This is a great wintry soup, with a generous chilli hit. Great for a cozy night in, when you just can't be buggered with a roast. You can throw some mushrooms (with the tomatoes) and spinach (at the last minute) in as well, for some extra nutrients - whatever floats your boat.

Smoky Chilli Pork and Cornbread Pie

Cut down on dishes and put these two lovers in the same pan, instead of serving them separately. They're made for each other. Don't forget the sour cream before the polenta... It's a regret-generator.

A nice, easy braise for a cool evening. It might be worth having a bit extra colcannon, as it's really only three serves as it is. Serve with some greens, like beans or peas.

Baked Chicken with Yoghurt

From Gourmet Traveller, the light, fresh flavours in this recipe are similar to those in the Italian dish maiale al latte - pork cooked in milk. The yoghurt becomes curds that more than make up for in flavour what they lack in looks. Leeks and mushrooms would be an interesting addition, if you have some lying about.
