Goan Pork Not-Quite-a-Vindaloo

While the original was probably, definitely a vindaloo, this one probably, definitely isn't. We subbed the dried birds-eye chillies for standard long red ones, purely for convenience, and it was probably a mildish-mediumish heat. Don't skip the yoghurt and mint chutney, either. Super tasty! Freeze the other half of the curry paste for later. You're definitely going to want this again.

From a quick Google, it seems that this curry is often made with wild boar, but if you can't find any, I'm sure pork will suffice. You know, just in case your butcher is out of boar.

Dan Dan noodles aren’t all that simple to make. The dish requires many different ingredients to accomplish a layered, complex flavor. But you can think of this dish having four parts: the chili oil, the meat mixture and sui mi ya cai (pickled vegetables you can find at your Chinese grocery store), the sauce, and the noodles/leafy greens.

Jude's Slow Roasted Pork

Adapted from the second 'Ripe' book, 'Ripe: A Fresh Batch', this meal isn't complete without the salsa and outrageously good barbecue sauce. The sauce can be made a few days ahead, and you can preserve half of it for a rainy day, so you basically can't lose. Serve with an improvised Cinzano Rosso cocktail.
